Ingredients:
1.5 lbs boneless, skinless chicken thighs
1 cup long-grain white rice
1 onion, finely chopped
3 cloves garlic, minced
1 lemon (zest and juice)
1/4 cup fresh parsley, chopped
2 tablespoons fresh thyme leaves
1/4 cup olive oil
1 cup chicken broth
Salt and black pepper to taste
Lemon slices for garnish π
Instructions:
Prepare the Chicken:
Season the chicken thighs with salt, black pepper, and the zest of one lemon. Let them marinate for at least 15 minutes to absorb the flavors.
Sear the Chicken:
