Maida Barfi Recipe

Ingredients

- 2 teaspoon sugar
- 2 Cup Milk
- 1/2 teaspoon vinegar
- 1/2 Cup Flour(Maida)
- Desi Ghee
- Nuts( optional )

Directions :

1. To caramelize sugar, you can heat it in a saucepan over medium heat until it melts and turns golden brown. Be careful, though, as it can burn easily!

2. Once the sugar is caramelized,gradually add the milk while stirring continuously to prevent any lumps from forming.

3. Keep cooking the mixture on low heat for around 10-15 minutes, stirring constantly until it thickens up and starts to come away from the sides of the pan. Now add 1/2 teaspoon of vingar to make a layer on top of the milk.

4. Take the pan off the heat and let the mixture cool down a bit.

Next step :
5. Heat a pan on medium heat and add 2 tablespoons of ghee.

6. Once the ghee melts, add 1/2 cup of maida (all-purpose flour) to the pan.

7. Stir the maida continuously to prevent it from burning and cook it for about 5-7 minutes until it turns light golden brown.

8. Make sure to keep the heat on medium-low to avoid burning the maida.Take the pan off the heat and let the flour(Maida) cool down a bit.

Preparation of Dough :
9. To make a dough,Gradually add milk mixture to the flour(Maida) and mix it with your hands or a spoon.

10. Keep adding milk and mixing until the dough comes together and forms a ball. The amount of milk needed may vary, so add it slowly to avoid making the dough too sticky.

11. Knead the dough by pushing it away from you with the heel of your hand, then folding it back over itself. Repeat this motion for about 5-10 minutes until the dough becomes smooth and elastic.

12. If the dough feels too dry, you can add a little more milk, or if it feels too sticky, you can sprinkle some flour.

13. Once the dough is smooth and elastic, shape it into a ball and cover it with a damp cloth or plastic wrap. Let it rest for about 4-5 hours to relax the gluten.

Next Step :
14. Grease a plate or tray with ghee and transfer the dough mixture onto it.

15. Use a spatula or the back of a spoon to spread and flatten the mixture evenly.

16. If you like, you can add some chopped nuts on top for a little crunch and press them gently into the barfi.

17. Allow it to cool completely, then pop it in the refrigerator for a few hours to set.

18. Once it's all set, cut the barfi into your preferred shapes and sizes.

Voila! Your homemade barfi is ready to be enjoyed.
