Inspired by Chef John over at @foodwishes , I wanted to make a version of his shrimp toast. I ended up with pretty much a Cajun Saute. Despite the method being flawed in the video, it turned out really well. It's also friendly for a carnivore diet.

RECIPE

Compound Butter:
1 Stick Softened Unsalted Butter
1/2 tsp Smoked Paprika
1/4 tsp Granulated Garlic
1/4 tsp Granulated Onion
1/4 tsp Celery Salt
Pinch Black Pepper
Few Shakes of Cayenne Pepper
1/2 tsp Salt

12 oz Chicken Breast, Sliced Thin
10 Large Shrimp, Split in half
1/4 Cup Heavy Cream
Lemon Wedges and Parsley for Garnish

1) Add all the ingredients for your compound butter and mix them together by hand or mash together with a fork.
2) Place a pan over medium high heat along with 2 tbsp of your compound butter and 1 tsp of duck fat (or comparable fat). Let this melt completely before cooking your chicken in 2 separate batches (2 minutes per side, set aside). Do the same with your shrimp.
3) Once all of your chicken and shrimp are cooked, add in your 1/4 cup of heavy cream and let reduce until thickened. Add your chicken and shrimp back in to coat in the sauce and serve.
