Peri-Peri Chicken is a flavorful and spicy grilled chicken dish popular in South African and Portuguese cuisine. Here's a short recipe for making Peri-Peri Chicken:

Ingredients:

4 bone-in, skin-on chicken thighs or drumsticks
2-3 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons paprika
1-2 tablespoons chili sauce or Peri-Peri sauce (adjust to your preferred spice level)
1 teaspoon dried oregano
Salt and pepper to taste
Lemon wedges and fresh parsley (for garnish)
Instructions:

In a bowl, combine the minced garlic, olive oil, lemon juice, paprika, chili sauce, dried oregano, salt, and pepper. Mix well to create a marinade.

Place the chicken pieces in a large, resealable plastic bag or a shallow dish.

Pour the marinade over the chicken, making sure it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or ideally, marinate the chicken for several hours, or even overnight for the best flavor.

Preheat your grill to medium-high heat. You can also use a grill pan on the stovetop if you don't have an outdoor grill.

Remove the chicken from the marinade and let any excess drip off.

Grill the chicken on medium-high heat for about 20-25 minutes, turning occasionally, until the chicken is cooked through and has a nice charred appearance. The internal temperature should reach 165°F (74°C).

While grilling, you can brush the chicken with any remaining marinade to enhance the flavor.

Once the Peri-Peri chicken is cooked through and has a nice char, remove it from the grill.

Garnish with lemon wedges and fresh parsley.

Serve the Peri-Peri chicken hot with your favorite side dishes, such as rice, coleslaw, or grilled vegetables.
