Extra crispy chicken wings

1 c pickle juice
1 tbsp salt & pepper
1 tbsp onion powder
1 tsp chili flakes
Dash of Cayenne
Marinate your chicken for at least four hours or overnight. Once chicken has marinated strain all the marinade in a calendar and place your chicken in a bowl. Add 2 cups of buttermilk and allow to sit for at least 30 minutes.
2 c butter milk for soaking
Flour dredge
4 c flour
2 tbsp corn starch
1/2 tsp baking powder
1 tsp salt & pepper
1 tsp paprika
1 tsp seasoning salt
1 tsp garlic & onion powder
Combine dry ingredients for a flour judge you may need more.
6-8 eggs whipped.
Place your chicken wings in the flour mixture then using a sifter sift out all the excess flour. then dip your flower chicken wings into the egg mixture.
Then follow with a final flour dredge. Set aside in a pan for at least 20 to 30 minutes so the flour will absorb.
Deep fry your chicken wings at 350° for about 15 to 20 minutes or until golden brown. if your chicken wings are cooking too fast reduce the heat to 325° you wanna make sure your chicken wings have an internal temperature of 165°. yes I use a commercial fryer if you do not have one a regular fry will work but your oil may go bad faster than mine. Hence the flower mixture will ruin your oil mixture.
Serve with a side of ranch.
