Lasagna Soup (one batch feeds our family of 9)
2 lbs. ground beef
1/2 onion, diced
3 cloves garlic, minced
1/2 gallon broth
1 Tbsp. salt
1 Tbsp. dried basil
1/2 Tbsp. dried oregano
1/2 Tbsp. dried rosemary
1 tsp. pepper
28 oz. can of diced tomatoes
6 oz. tomato paste
1 lb. (approx. 6 cups) of pasta such as rotini or penne
Mozzarella cheese, shredded

Place ground beef in soup pot with onion and garlic. Cook until meat is browned and onion is soft. (If your meat has a lot of fat, you may need to drain it off.) Add broth, seasonings, and tomato products. Bring to a boil, then add pasta. Stir and continue to boil for 10 minutes or until pasta is done. Add shredded cheese to bowls just before serving. Enjoy!
