Time to make a salad using things that I grew in my cold frame. NY is not having spring temps as it is cold at night. I use the "cut and come again" method which means cutting the outer leaves and letting the inner leaves replenish the plant. Most of the salad consists of Kale. There is also Dandelion Leaves, Swiss Chard, Bok Choi, Romaine Lettuce, and Arugula in the mix. Pumpkin seeds and Feta Cheese will make this a delicious salad once the vinaigrette is added. I haven't checked to see if we have enough whole lemons to use in a lemon vinaigrette. My Maternal Grandmother used to make that dressing for me when I was a little spoiled brat!
