INGREDIENTS :

295 grams canned corn ( 10.4 oz )
185 grams red lentils ( 6.52 oz )
100 grams chopped green bell pepper ( 3.52 oz )
100 grams chopped red bell pepper ( 3.52 oz )
100 grams chopped yellow bell pepper ( 3.52 oz )
100 grams chopped medium onion ( 3.52 oz )
385 ml coconut milk ( 13.01 fl oz )
450 ml vegetable stock ( 15.21 fl oz )
6 minced garlic cloves
1 teaspoon chili powder ( 1.97 grams )
1 teaspoon garlic powder ( 1.58 grams )
1 teaspoon cumin powder ( 2.5 grams )
1/2 teaspoon ground black pepper ( 1.16 grams )
2 teaspoons coconut oil ( 9.00 grams )

INSTRUCTIONS :

.in a pot / wok on medium heat add 2 teaspoons coconut oil
.once heated add 6 minced garlic cloves & cook for 1 minutes
.add 100 grams chopped medium onion & cook for 2 minutes
.add 300 grams chopped green ,red, yellow bell peppers, cook for 2 to 3 minutes
.add 1 teaspoon garlic powder, 1 teaspoon cumin powder
.add 1 teaspoon chili powder & mix well
.add 450 ml vegetable stock, 385 ml coconut milk & mix well
.add 185 grams red lentils, 295 grams canned corn
.add 1/2 teaspoon ground black pepper & mix well
.cook until boiling
.reduce to low, cover with a lid & simmer for 10 minutes
.blitz with hand blender until chowder consistency
