INGREDIENTS :

250 grams all purpose flour ( 8.81 oz )
250 grams sugar ( 8.81 oz )
250 grams room temp butter ( 8.81 oz )
270 ml heavy cream ( 9.12 fl oz )
200 grams strawberry jam ( 7.05 oz )
2 1/2 teaspoons baking powder ( 10 grams )
1 teaspoon vanilla extract ( 4.9 ml )
2 tablespoons milk ( 29.57 ml )
1/4 teaspoon salt ( 0.57 grams )
2 + 2 tablespoons icing sugar ( 15.6 + 15.6 grams )
4 room temp eggs

INSTRUCTIONS :

.in a mixing bowl add 250 grams all purpose flour, 250 grams sugar
.add 2 1/2 teaspoons baking powder, 1/4 teaspoon salt & whisk well
.add 4 room temp eggs, 250 grams room temp butter
.add 2 tablespoons milk, 1 teaspoon vanilla extract
.mix with an electric whisk until batter consistency
.pour equally into two buttered cake tins lined with parchment paper
.place in preheated oven 180 c / 356 f for 25 minutes
.remove cake from oven and leave to completely cool
.in a bowl add 270 ml heavy cream, 2 tablespoons icing sugar
.mix with electric whisk until thick cream consistency
.cut a thin slice off the top of the bottom cake to level surface
.evenly spread on cream
.evenly spread on 200 grams strawberry jam
.place top cake on top
.sprinkle 2 tablespoons icing sugar on top
