I made my honey a Super Quick & Moist Coconut Cake for his birthday! This easy & delicious cake is unbelievably light & fluffy. This is another one that everyone asks for the recipe. It's almost embarrassing when I have to say I start with a cake mix. LOL I hope y'all go make you some!!!!

Super Quick & Moist Coconut Cake

1 box white cake mix (plus ingredients needed on box)
1 TBSP coconut extract

Preheat oven to temp on your cake mix box. Mix all ingredients as needed on box recipe. Add coconut extract and mix well. Bake as directed. When done, set on cooling racks to cool.
Meanwhile, make icing.

1/2 cup butter, softened
1/2 cup solid shortening
1 TBSP coconut extract
4 cups sifted powdered sugar
2 TBSP whole milk
1 1/2 cup sweetened shredded coconut, divided

In a mixing bowl, cream butter & shortening. Add extract and mix. Add sugar and mix until fluffy. Add milk, one tablespoon at a time, until spreading consistency. Add one cup of coconut and mix. Frost cake. Add coconut to top and/or sides of cake as you like. Enjoy!
