Mini Omelets

It's easy to make mini Omelets. They are delicious, nutritious and perfect to make ahead for meals on the go! To make mini omelets you will need the following ingredients:

Eggs
Cooked and crumbled bacon
Cooked and ground sausage
Shredded cheese(whatever kind you like)
Diced onion and green pepper
Frozen chopped spinach cooked and cooled
Milk(optional)
Salt and pepper(optional)
Butter flavored nonstick cooking spray
A muffin /cupcake pan

Directions: Spray inside muffin/cupcake pan with butter flavored nonstick cooking spray. Break eggs into a bowl. Number of eggs will vary based on how many mini omelets you want to make. In this video I used 6 eggs to make 6 mini omelets, however 4 or 5 eggs would be fine as I feel like 6 eggs were too many. Beat eggs with whisk or fork. Add a little milk if you like. Add salt and pepper or garlic salt and pepper if you like. Pour egg mixture into muffin pan, filling each cup about halfway full. I did 3/4 way full and I feel like it was too much bc they puffed up a lot in the oven. Add the toppings. I made 1 with bacon, 1 with sausage, 2 with onion and green pepper, and 2 with bacon, sausage, onion and green pepper. Add shredded cheese. I used shredded taco cheese and shredded Italian cheese. I also made some with spinach and cheese and some with bacon, sausage, spinach, and cheese. Bake at 375 for 30 mins. Serve alone or on biscuits or English muffins. Easy to make ahead for meals on the go! Enjoy!

Note: you can substitute these ingredients to make them however you like. Omelets are pretty versatile. You can make with only veggies, only meat, or any other way you like!
