RIBS
Wile heating up your smoker to 250 trim fat score membrane and add binder I used olive oil then pat the rub of your choosing on all sides.
When smoker is ready at 250 add your ribs bone side down and add prob to thickest part of meat make sure it doesn’t touch the bone it will give wrong readings.
Let smoke every hour spritz apple cider vinegar and apple juice mix until the internal temp hits 170.
When internal hits 170 take off and wrap I use parchment paper because it’s not as restrictive as butcher paper add a heavy amount of your spritz to your ribs then wrap.
Place back into the smoker bone side down and add your probe wait till it hits about 190 internal and spry and parchment paper with the spritz to cool the bark down a little bit.
Once it hits 195-200 internal take out and re wrap and pour your juices that where in the old wrap over your ribs.
Once wrapped again grab a towel and a small cooler or any insulated box to keep the heat in and let sit for an hour.
When the hour is up take them out cut and server!
