Italian-Inspired Mushroom Antipasti: A Crowd-Pleasing Favourite

Ingredients:

500 g mushrooms
60 g lemon juice
Water enough to cover mushrooms
170 ml white wine vinegar - 5% acidity
0.5 cup olive oil
5 garlic cloves
1 tsp salt
1 tsp oregano
1 tsp basil
1 tsp chilli flakes

Preparation:

Add water and lemon juice in a pot and bring to boil.
Clean and wash the mushrooms and trim the stems off. If the mushrooms are larger, cut them in half.
When the water is boiling, add the mushrooms in and boil for 5 minutes.
In another pot add oil, vinegar, garlic, salt, oregano, basil and the crushed chilli flakes. Boil for around 3 minutes, remove the garlic from the marinade, then remove the marinade from heat.
Drain the mushrooms.
In a sterile jar, fill with mushrooms, enough to leave around 1-2 cm headspace at the top. Add 1 garlic clove to each jar.
Stir the marinade and pour over the mushrooms, still leaving headspace.
Seal with the lid and store in the fridge.

Tips:

They will last in the fridge for a few weeks.
