INGREDIENTS :

FILLING
600 grams cubed lamb steak ( 21.16 oz )
1 chopped medium onion
3 minced garlic cloves
35 grams all purpose flour ( 1.23 oz )
83 grams butter ( 2.92 ( oz )
545 ml vegetable broth ( 18.42 fl oz )
1/2 teaspoon rosemary ( 0.55 grams )
1/2 teaspoon sage ( 0.34 grams )
1/2 teaspoon thyme ( 0.71 grams )
1/2 teaspoon salt ( 1.14 grams )
1/2 teaspoon ground black pepper ( 1.16 grams )

PASTRY
600 grams all purpose flour ( 21.16 oz )
379 grams cold butter ( 13.36 oz )
5 eggs
1/4 teaspoon salt ( 0.57 grams )
4 tablespoons cold water ( 59.14 ml )

INSTRUCTIONS :

.in a large pan on medium heat add 83 grams butter
.once melted add 3 minced garlic cloves & cook for 1 minutes
.add 1 chopped medium onion & mix well
.add 1/2 teaspoon thyme, 1/2 teaspoon sage
.add 1/2 teaspoon rosemary, mix well & cook for 2 minutes
.add 600 grams cubed lamb steak
.add 1/2 teaspoon salt, 1/2 teaspoon ground black pepper
.cook for 5 to 7 minutes ( until brown ), stir occasionally
.add 35 grams all purpose flour, mix well & cook for 2 minutes
.add 545 ml vegetable broth, mix well & bring to a boil
.reduce to simmer & cook for 90 minutes ( until lamb is tender )
.in a mixing bowl beat 4 eggs
.in another mixing add bowl 600 grams all purpose flour, 1/4 teaspoon salt & mix well
.add 379 grams cold butter & mix together with fingers until crumb consistency
.make a well & add 4 beaten eggs & mix in
.add 4 tablespoons cold water ( 1 at a time ) while mixing in until combined
.remove dough from bowl & cover with cling film
.place in fridge until filling is ready
.when filling is ready the sauce will be reduced and lamb will be tender, leave to cool
.remove dough from fridge & cut in half
.roll 1 half until flat & smooth
.place on top of baking dish & work into dish
.fork the base of dough
.pour in filling & spread evenly
.roll 2nd half of dough until flat & smooth
.place on top of pie
.cut off any excess dough & tuck in edges
.pierce a hole & slits on
.beat 1 egg
.brush egg wash on to pie top
.place in preheated oven 200 c / 392 f for 25 to 30 minutes
