Ingredients:

• 1.3 kg boneless leg pork
• 3 tablespoons brown sugar
• 1 tablespoon fine dried herbs
• Juice of 1 small lemon
• Salt to taste
• Black pepper to taste
• 1 tablespoon olive oil
• 3 cloves of minced garlic
• 1 cup of red wine
• 1 liter of beef broth
• Chopped parsley to taste

Method:

In a bowl, place the shank, sugar, fine herbs, lemon juice, salt, black pepper, olive oil, garlic and wine.

Mix well and leave to marinate overnight.

The next day, separate the marinade from the meat and reserve both separately. Let the meat dry out a little.

Sauté the meat using a little olive oil in the pressure cooker and brown on both sides. Add the marinade liquid and the meat broth until the contents of the pan are covered. Cover and pressure cook for 20 minutes.

Remove the meat from the pan, cut into cubes and return to cooking with the pan uncovered until the liquid is reduced.

Sprinkle the parsley on top.
