The one crucial thing is the early harvesting of the olives. So if an olive oil it's an early harvest, that's usually a good sign. And it usually means that we will find higher levels of polyphenols because the olives lose polyphenols during the ripening process.

Yeah, green is the most polyphenol. So if you're just getting olives, the green ones have more polyphenols.
And then, as they age, they lose polyphenols, and they increase the amount of fat content. Oleic acid, a healthy fat, increases fat content, but they lose polyphenols.
The blacks are ripe with more fat, higher fat content, and lower polyphenol content.
