Banana Cake

This homemade Banana Cake recipe is moist, soft, and tasty. It’s simple and very easy to make.

Ingredients:

3 medium ripe bananas
½ cup (80 grams) granulated white sugar
½ cup (80 grams) brown sugar
2 large (100 grams) eggs
1 teaspoon (4 grams) vanilla extract
½ cup (120 ml) vegetable, canola or extra light olive oil
2 cups (260 grams) all purpose flour
2 ½ teaspoons (10 grams) baking powder
½ teaspoon (2 grams) fine salt

Instructions

For the Cake:
1. Preheat the oven to 350°F. Spray a 7x3-inch cake pan with baking spray and line with parchment paper.
2. In a mixing bowl, whisk together the bananas, and sugars.
3. Add eggs, vanilla extract, and vegetable oil. Beat until combined.
4. Sift, flour, baking powder and salt. Beat just until incorporated. Scrape down the sides and bottom of the bowl as needed.
5. Pour the batter into the prepared baking pan.
6. Bake for 55 to 60 minutes or until a wooden pick inserted into the center of the cake comes out clean. Place on a wire cooling rack and let cool completely in the pan.
