Ingredients:

• 1 kg pork tenderloin
• 3 tablespoons of olive oil
• Salt and pepper to taste
• 2 tablespoons butter at room temperature
• 2 tablespoons wheat flour
• 1 large chopped onion
• 3 garlic cloves minced or crushed
• 1 tablespoon chopped thyme
• 3/4 cup dry red wine
• 2 cups of beef broth
• Juice of 1/2 lemon

Method:

Season the meat with a spoonful of olive oil, salt and pepper.

Heat a spoonful of olive oil in a pan and fry the meat until browned on all sides.

Transfer the fillets to a mold and bake in a preheated oven at 180ºC for about 30 minutes.

Remove from the oven and cover the pan with aluminum foil, let the meat rest for 15 minutes.

In the same pan that the meat was fried, put a spoonful of olive oil, heat it well, and sauté the onion until golden.

Add the garlic, mix well and let it cook for another 6 minutes.

In a container, put the butter, flour, mix well until you form a paste and set aside.

Pour in the wine, mix well, scraping the bottom of the pan well and cook until the wine evaporates.

Add the meat broth, thyme, lower the heat, mix well and cook for about 5 minutes.

Add the butter paste with the flour, mix well until it dissolves in the sauce, add the lemon juice and let it cook until it forms a creamy and consistent sauce. Hit the salt.

Remove the foil from the mold and pour the sauce over the meat. Put it back in the oven just to warm up.
