This is Season One Episode Six from Oct 1979, and the episode is called "The Layoff"

In this episode..........
Benson has to layoff some of the staff to balance budgets and among the ones he has to let go is the elderly pastry chef.
Katie takes it hard, and has unkind words for Benson, but eventually all works out well for all concerned.
