Here's a simple recipe for keto cheese flan:

Ingredients:

8 oz cream cheese, softened
1/2 cup heavy cream
4 large eggs
1/2 cup granulated keto-friendly sweetener (such as erythritol or monk fruit)
1 tsp vanilla extract
1/4 tsp ground cinnamon
Pinch of salt

Instructions:

Preheat the oven to 350°F (180°C). Grease a 9-inch round baking dish with nonstick cooking spray.

In a mixing bowl, beat the cream cheese and heavy cream together with an electric mixer until smooth and creamy.

Add the eggs, sweetener, vanilla extract, cinnamon, and salt, and beat until well combined and smooth.

Pour the mixture into the prepared baking dish.

Place the baking dish in a larger baking pan or roasting pan. Fill the larger pan with hot water, about halfway up the sides of the flan dish. This will create a water bath and help the flan cook evenly.

Bake for 45-50 minutes or until the flan is set and a toothpick inserted in the center comes out clean.

Remove the flan from the oven and let it cool to room temperature.

Once the flan has cooled, run a knife around the edges of the dish to loosen the flan from the sides. Invert the flan onto a serving plate, and serve chilled.
