Ingredients:
1 can of chickpeas, drained and rinsed
1 ripe avocado, peeled and pitted
1/4 cup of chantro (Mexican sour cream)
2 tablespoons of olive oil
2 garlic cloves, minced
Juice of 1 lemon
1/2 teaspoon of ground cumin
Salt and pepper to taste
Instructions:
In a food processor, combine the chickpeas, avocado, chantro, olive oil, garlic, lemon juice, cumin, salt, and pepper. Pulse until smooth and creamy.
If the hummus is too thick, add a tablespoon of water at a time until you reach the desired consistency.
Taste and adjust seasoning as needed.
