Ingredients:

2 gutted mackerels
300 g frozen mixed vegetables
1 onion
1 garlic head
1 lemon
1 tbsp butter
Salt
All purpose seasoning
Ground black pepper
Dry lovage
Crispy chicken polish seasoning
Dry thyme
½ bunch dill

Preparation:

Spread the butter in an oven dish.
Add the fish in and butter it up.
Add the sliced onion and half of the garlic cloves inside each fish.
Add lemon slices on the fish, as well as thyme.
Sprinkle salt, ground black pepper, all purpose seasoning, lovage, dill, crispy chicken seasoning and rub all of them on the fish.
Cook in the oven at 180℃ for 30 minutes or until the fish is cooked.
Whilst the fish is cooking, let’s cook the vegetables.
In a wok, on low heat, heat up oil, add the remaining garlic in, sliced, and fry for 1-2 minutes.
Add the mixed vegetables in and mix.
Add ground black pepper, all purpose seasoning, salt, lovage and mix well.
Add chicken seasoning and cook covered for 10 minutes or until the vegetables are cooked.
Halfway through cooking in the oven, take the fish out and brush liquid from the dish onto the fish and place back in the oven.
Cook for 10 minutes longer.
Server the fish with side of vegetables.

Tips:

This recipe works with any kind of fish you prefer.
By using frozen vegetables , you save yourself a lot of time.
If you do use fresh vegetables instead of frozen, you’ll need to add some liquid in the wok, so they can properly cook through, such as chicken/vegetable stock. But it will take much longer, especially carrots.
