Minced Meat and Cabbage

This ground beef and cabbage recipe belonged to my mother. She was a rustic, rustic country cook. However, having traveled, worked and experienced food all over the world, in retrospect I realized that many of the dishes she prepared were simple yet perfect for the moment. Sometimes you have to put some emotion and love into your food to make it special. Serve with corn on the cob and cornbread.
Ingredients
• 1 large head cabbage, finely chopped
• 1 (14.5 ounce) can diced tomatoes with juice
• 1 onion, halved and thinly sliced
• 1 tablespoon Italian seasoning
• salt and ground black pepper to taste
• 1 pound lean ground beef
