Add the diced tomatoes and frozen peas and cook, stirring, for 3 minutes. 5. Drain the soaked rice and add it to the pan. Stir to combine and cook for 1 minute. 6. Add the water and bring to a boil. Reduce the heat to low, cover, and cook until the rice is tender and all the liquid has been absorbed, about 20 minutes. 7. When the rice is cooked, fluff it with a fork and season with salt.
