Key Lime pie meets cake!

Ingredients:

Cake

2 cups All Purpose Flour
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 Stick (1/2 cup) Butter
1 1/2 cup Granulated Sugar
3 Eggs
1 cup Buttermilk
Zest of 1 Lime
Juice of 1/2 Lime (2 tbsp.)
1 tbsp. Lime Extract
A few drops of Green Food Coloring (optional)

Frosting

1/2 Stick (1/4 cup) Butter
3 cups Confectioner's Powdered Sugar
Zest of 1 Lime
1/4 cup Lime Juice

Instructions:

Cake

Preheat oven to 350º F.
Cream together sugar and butter in a large bowl using a mixer at medium speed. Beat in eggs one at a time.
In another bowl, whisk together dry ingredients.
Rotate between beating in dry ingredients and buttermilk, starting with dry ingredients, until all is combined.
Beat in lime zest, juice, extract, and food coloring.
Split batter between two 8-inch cake pans that have been sprayed and floured.
Bake at 350º F for 30 minutes or until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes, remove from pans, and completely cool cakes on wire rack.

Frosting

Combine all ingredients with a whisk.
Spread half of frosting on one cake, top with the other cake, and cover entire cake with frosting.
Garnish with lime slices.
