Very Cherry Barbecue Sauce

A barbecue sauce with a tart, cherry twist!

Ingredients:

2 cups chopped and pitted Cherries
1/3 cup Brown Sugar
1/4 cup Red Wine Vinegar
1 cup Ketchup
1/4 cup Tomato Paste
2 chopped Shallots
1 tsp. Red Pepper Flakes
Salt and Pepper to taste

Directions:

1. Add Cherries, sugar, and vinegar to a medium saucepan. Bring to a boil and simmer on low for 10 minutes.
2. Add remaining ingredients, bring to a boil, and simmer again for 5 minutes.
3. If you prefer, you may blend sauce with an immersion blender.
