This is the end season clean up, cutting the plants stem close to the soil and leaving the roots in the soil helps to big the soil. As the root break down it creates air pockets for next years plants. Leaving the roots in the soil helps to feed the soil life. The plants that were removed will be composted to add back to the soil in the spring.
