I harvested the horseradish in mid December. When to harvest horseradish? Typically you want to wait to harvest the horseradish until the “BER months” September, October, November, and December. I try to wait until at least my first frost before I try to harvest my horseradish. How to harvest horseradish with a shovel, take your shovel dig down straight near the growth coming out of the ground. Gently pry back and move the shovel to the other few sides of the horseradish. You may hear some roots pop either with the shovel and prying or when you pull the horseradish out of the soil. WARNING: If you decided to grow horseradish, fresh from the garden tastes awesome. However it can grow in an invasive manner. There is a tap root and side feeder roots that if broken and left in the soil, will grow more horseradish and it does not stay contained in one area. I don’t mind that it grows so wild because I enjoy horseradish. Not trying to deter anyone I just want you to be aware horseradish wants to spread.
