Green Bean Casserole

Ingredients:
2 lb fresh green beans, blanched in boiling water for 3-4 minutes, then plunged into an ice bath.

Make a roux in another pan: 2 tbsp melted butter, add 2 tbsp flour and cook 2 minutes until flour no longer “raw.” Add 4 oz cheese (cheddar, swiss, Jack or gruyere) until cheese melts. Then add 1 cup half and half.

In another pan, saute:
2 strips bacon, chopped
1/2 onion, diced
8 oz mushrooms, diced

Add bacon/onion/mushroom mix into sauce, then mix into green beans. Pour into 13x9 pan. Top with panko bread crumbs and fried onion pueces. Bake for 30 minutes or until sauce is bubbly and toppings are crisp.
