This is one of my favorite sandwiches to order at a deli and it is simple to make at home. An Italian Sub is made with a variety of Italian meats. I’m using mortadella, calabrese salami, pepperoni and boiled ham. I wanted to get capicola but there was none at the store. You can use any variety of Italian meats for this recipe. For the cheese, I’m using provolone which is what you generally find in an Italian sub. Shredded iceberg lettuce for crunch, thinly sliced beefsteak tomatoes or plum tomatoes. These are pepperoncini which add tang and a little heat to the sub. This is optional but I love it in my subs. They come in a jar whole or sliced. I had the whole ones so I just sliced it for the sub. Thinly sliced yellow onion. Leave it in cold water for about 10 minutes. Of course you need a nice long roll. At a deli, they’ll sprinkle oil, vinegar and oregano on the sandwich. I like to make the dressing in a bowl so it’s easier to use. You can substitute a bottled Italian dressing if you don’t want to make your own. To a bowl, add red wine vinegar, olive oil, sugar, salt, ground black pepper and dried oregano. Whisk this and that’s it for the simple dressing. You can substitute white vinegar, apple cider vinegar and a vegetable or canola oil for the dressing. Slice your roll in half lengthwise. Drain the onion and pat them dry. Spoon the dressing on the top and bottom. Layer the meats, start with mortadella, salami, boiled ham and pepperoni, provolone cheese, sliced onion, shredded lettuce, pour a little dressing over the lettuce, sliced tomato, cut it in half if it’s loo large, plum tomatoes are the perfect size for this sandwich because they are smaller and you don’t have to cut them in half. Top with pepperoncini if you’re using it. And here’s the Italian Sub that tastes even better than the ones from the deli. A really satisfying sandwich that you’ll make often.
