Stuffed peppers are my husbands' favorite dish. The classic version is loaded with ground beef, garlic, onion, tomatoes, spinach, and rice. My stuffed peppers are loaded with flavors using mushrooms, zucchini, garlic, and spices. They're easy, healthy, and filling.

It can be made ahead of time and stored in the refrigerator. It tastes even better the next day when all the flavors have melded together
