How I Maintain My Weight - what I eat in a week ( quick & easy vegan meals )
Hey friends and welcome!🌞 How I maintain my weight is very much individual to me, although I'm happy to share the 'inside scoop' I want to highlight everyone is different and at different phases of our healing process when it comes to food. So please take that into consideration.

Veggie Pasta:
1 large carrot
1/2 leek
1/2 large cooking onion
1/2 medium sized eggplant
5 garlic gloves
1/3 block of tofu ( more if you desire )
1 can pasta sauce
2 tbsp balsamic vinegar
1 tsp salt ( more to taste )
1 tsp black pepper ( more to taste )
large handful fresh herbs ( parsley, basil or both )
1/4 tsp thyme
2 tsp oregano
2 tsp basil ( if you didn't add fresh )
chilli flakes to taste
1-2 tbsp olive oil
chop veggies as shown and mince garlic
heat large sauce pan on medium and start by ripping tofu into the pan in small medium sized chunks. ( I didn't start by doing this but I reccomend it! ) after the tofu is browned, remove it from the pan and set aside.
Add more olive oil to the pan if needed and add carrot, leek, onion and garlic to the pan. cook until onion is translucent then add eggplant and season with salt and pepper. Cook for about 5-7 minutes. Add tomato sauce, a splash of water, balsamic, tofu and herbs / spices. Cook for 10-20 minutes.
In the meantime make your pasta of choice. Save 1/4 pasta water and mix it into the sauce ( this is optional depending on the pasta you made )

Spices I used on the roasted veggies:
2 tbsp of Malaysian curry powder
2 tsp turmeric
1 tsp black pepper
1 tsp salt ( more to taste )
1/4 tsp fennel

note: I don't show all my movement in every video because I don't want others to judge themselves based on me. I also honestly, forget to record it because it's "me" time. But it is an important part of my life and I encourage you to get some movement into your life in all different ways!
