If you have a leftover eggplant/aubergine and you don't know what to do with it, then try this recipe of cornflakes crispy fried eggplant.

Crispy Fried Eggplant - aubergines with cornflake breadcrumbs recipe:

INGREDIENTS:

1 eggplant/aubergine
2 eggs
100g flour more or less
100g of my homemade cornflakes breadcrumbs
Salt
Ground black pepper

DIRECTIONS:

Peel the skin off the eggplant and slice it in round slices.
Over a deep pot, add a strainer and put the eggplant slices in the strainer.
Sprinkle salt over the slices and leave to soak for around 15 minutes. This will take out the extra moisture/water from the eggplant. Remove the slices after 15 minutes and dry them on a kitchen paper towel.
In a deep bowl, crack the eggs, sprinkle salt and ground black pepper and whisk.
Over medium heat, add oil in a frying pan and heat.
Take the bowl of egg, flour and breadcrumbs and cover the eggplant slices in the following order: dip first in egg, making sure the slice is covered, then in flour, making sure the slice is covered evenly in flour on both sides, then again in egg and lastly in the cornflakes breadcrumbs. Add in the frying pan and fry until golden on both sides. Repeat the same process
with the rest of the slices.
