How to make quiche with chickpea flour
Ingredients:
150 g of chickpea flour
5 g of salt
450 ml of water
25 g extra virgin olive oil
spices to taste (I used black pepper)

Cover the mixture with cooking film and let it rest for 2 hours at room temperature
After 2 hours, remove the film
Remove the foam on the surface with a skimmer
Then add 5 g of salt and 25 g of extra virgin olive oil
Mix well and set the mixture aside
Grease a pan with a drizzle of extra virgin olive oil
Brush the oil all over the pan
Pour the mixture into the pan
Add a drizzle of extra virgin olive oil and a sprinkling of black pepper (or your favorite spice)
Bake in the oven at 250 ° C, for the first 10 minutes keep the pan in contact with the base of the oven, then move the pan to the center
