Vegan Pumpkin Oat Muffins

Made with 8 simple ingredients, these pumpkin oat muffins are an easy to make vegan breakfast treat.

Ingredients
1/2 cup of oat flour
1/2 cup of rolled oats
1 cup of pumpkin puree
1 tsp of nutmeg
1 tsp of coriander
1/2 tsp of cloves
2 tbsps of maple syrup
1 cup of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350F.

2. In a bowl, add oat flour, rolled oats, pumpkin puree, nutmeg, coriander, cloves, maple syrup and almond milk. Mix well.

3. Portion 2 tbsps of mixture into each cup of a muffin tin. Mixture should yield approximately 6 muffins.

4. Bake for 30 minutes, or until muffins have turned golden brown and fully cooked through.

5. Remove from oven and let cool. Serve and enjoy!
