Foreigner reaction to tasting authentic Filipino food Chicken-Pork Adobo, a famous traditional Filipino dish. Adobo is prepared using pantry basics, like soy sauce, black pepper, white vinegar, garlic, onions, and bay leaves, to create a marinade. The one I had has all the mentioned ingredients plus chilli flakes. I also learned that there are so many ways to cook adobo. In Manila, it is common that their adobo has boiled eggs, in some provinces they add pineapple chunks, there are some that add sliced potatoes too. In Cebu, as I was told, they don’t use soy sauce in their adobo, just vinegar. In Iloilo if you opt not to use soy sauce you can use “Atsuete” or Annatto an orange-red condiment and food coloring derived from the seeds of the achiote tree, native to tropical regions.Also from a research I did, the term Adobo is actually derived from the Spanish word “Adobar” meaning marinade. The practice of marinating a meat in a flavorful mixture made from vinegar, salt, garlic, paprika, and oregano was common to Spanish Cooking.  A Spanish Colonists gave the name “Adobo” to the cooking method indigenous to the Philippines, as their marinades were so similar.Overall, I did enjoy this dish.
