Korean Spice Creamyyyyy tofu ✨🤤
Korean Spice Creamy Tofu, best enjoyed on a mountain ✨🏔🌞
Ingredients
• 1/2 block tofu
• 1/4 large onion
• 1” fresh ginger
• 2 cups shiitake mushrooms
• 1/2 small bell pepper
• 2 stocks kale
• 1/3 cup Thai basil
• 2 tbsp soya sauce
• 2 tbsp garlic hummus
• 1/2-1 tbsp miso paste
• 1/2 tbsp Korean spice ( gochuharu )
• 1 tbsp toasted sesame oil
Directions
• chop all veggies, heat a pan on low-medium heat and add oil. Once hot add onion, ginger and mushrooms. Sauté until mushrooms start to caramelize ( turn brown )
• grumble / tear tofu into the pan and sprinkle in Korean spice and soya sauce ( I ran outta salt so feel free to add some salt to taste! ) sauté for 3-4 minutes
• add hummus, miso and 1/4 cup of water to a jar and shake really well. Add kale, bell pepper and Thai basil to thee pan, mix and sauté for 2 or so minutes before adding sauce. Once you’ve add the sauce mix really well and allow some of the liquid to evaporate until you’ve got a beautiful silky tofu dish!
