Skinny Ricotta & Spinach Filling Sauce For Guilt Free Yummy Lasagna Part 1 of 3. Low Calories

Slimming & guilt free low carbs & low calories ricotta and spinach filling for healthy super yummy light lasagna dish. Part 1 of 3

2 teaspoons of coconut oil for frying.
1 pack of baby spinach.
Baby spinach need minimal gentle cooking, as they wilt very quickly.
1 teaspoon of salt.
Stir , cover and et cook at low heat for 2 minutes.
Break down the spinach, i use scissors to gently chop them.
Add about 250 g of ricotta cheese.
Mix well & add a couple of pinches of pepper.
Add 1 cup of water (250 ml) to make a thick sauce consistency. Mix Well.
Lower the heat to minimum, cover & let cook gently for 10 minutes.
I use Halloumi for its high melting point & its stretchy mozzarella texture.
Grate it on the largest setting.
I add it directly in the sauce saving time later with layering my lasagna.
Mix well, cover & let it cook at low heat for another 10 minutes.
And it's done! Let it rest until ready for the next step.
See, the Halloumi has retained its texture nicely…
This can used as sauce or filling for many veggie pasta, rice, pies etc dishes.
I will use it for a delicious, but light & guilt free cheese spinach lasagna
