Homemade Sriracha Sauce
1 ½ lbs fermented Fresno AKA red jalapenos
4 cloves garlic chopped
1 Tbsp Salt
3 Tbsp dark brown sugar
½ cup cider vinegar
The salt to filtered water ratio for starting the ferment is 5 cups of water to 3 ½ Tablespoons of plain salt

There are many lid types for mason jars that can serve the same purpose. I just prefer the airlock that allows me to vent it outside. It cuts down on the comments from the next room.
