In part 1, I showed how to make fermented chickpeas and garlic using some cabbage which always ferments really well.

Now that we have our stores of chickpea ferment we can go ahead and use a high speed, high power food processor like the vitamix and add some sprouted sunflower seeds, lemon juice and a splash of extra virgin olive oil and make hummus that's more delicious and much more easily digested and healthy than standard hummus.

I'm very pleased with my proof of concept and I'm going to make a year's supply of fermented chickpeas and garlic so that I can whip up some hummus any time at the drop of a hat. The longer it's stored the better it tastes!
