Best enjoyed with a view🌲✨🏔

veggie pasta
• 5-7 brussel sprouts
• 2 cups mushrooms
• 1/4 large red onion
• 1 tbsp olive oil
• 1 tsp black pepper
• chilli flakes to taste
• 2 finger pinch of salt + more for pasta water
• 3 tbsp mushroom and black truffle paste ( sub for pesto )
• 1 large serving of brown rice pasta

• chop your veggies as shown
• heat a pan on medium heat and add oil, once hot add mushrooms and onions. Sauté until mushrooms start to brown. Add brussel sprouts, pepper, chilli flakes and salt then cover with a lid. 7-10 minutes ( depending on how thick your brussel sprouts are! )
• cook pasta according to package
• when you strain your pasta save a touch of the pasta water!
• Reduce the heat of the veggies and add your pasta, pasta water and pesto of choice!
• combine everything really well, serve and enjoy✨🌲🏔
