Rolling the egg is very important for making sure the heat is evenly distributed and keeping the membrane from sticking to the shell. It is also important to make sure the embryo gets enough albumen. Albumen is the white part of the egg that contains water and protein. It also serves as a microbial defense directly killing bacteria. Many embryos that do get enough albumen end up underdeveloped or sickly.
