Yummy Lemon Bar Cookies🎅Joy To The World

Lemon bar cookies are one of our families favorites for Christmas. And it works well with Bob's Red Mill 1 to 1 gluten free flour too!
I hope to bring joy and encouragement into the lives of those watching ... and I share a short devotion at the end of each video.

LEMON BAR COOKIES:
1 cup flour, 1/2 cup butter (1 stick), 1/4 cup powdered sugar, 1 cup sugar, 2 teaspoons grated lemon peel if desired, 2 Tablespoons lemon juice, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 2 large eggs, some powdered sugar to sprinkle on top when finished.
Preheat oven to 350 degrees
Mix flour and powdered sugar together in a bowl with butter and press into a 8x8 or 9x9 pan building up a half inch around the sides. Bake for 20 minutes.
Beat the remaining ingredients together with an electric mixer until light and fluffy.
Pour over the hot crust and bake for 25-30 minutes. Cool pan on wire rack. Dust with some powdered sugar and cut into squares.
