The 4 Hour Pickle: Pickled Onions Recipe #Short
I love making pickles and pickled onions are my favorite! I particularly like this recipe with shallots on fatty meat dishes like, tacos, burgers, stews, etc... It's also amazing on vegetarian mushroom dishes. They give great balance to Umami.
Recipe
2 large shallots sliced thin
1c Red Wine Vinegar
2T Sugar
1t Sea Salt
1t whole peppercorns
2 bay leaves
If this is your first time pickling this is a great recipe to try out. It's important to remember you may need more or less brine depending on how big your jar is. The ratios of salt, sugar, and vinegar are important to the pickling process but everything else is just flavoring. If you like spicy try add red pepper flakes or if your looking for something more herbal add dill, garlic, extra herbs from your garden you don' know what to do with.
Remember quick pickles need to be stored in the fridge because we are not sanitizing the container like in the canning process.
