Ingredients Required.
2 - egg whites, 1 full egg
1/2 - chopped yellow pepper
1/2 - chopped onion
20 g - feta cheese
Salt
Pepper
Step 1. Whisk together the eggs, add in a pinch of salt and pepper. Set aside.
Step 2. Heat a pan with oil over medium heat, saute the peppers and onions until almost cooked. Remove them from the pan and set them aside. Turn the heat down to medium, and add more oil.
Step 3. Add the eggs to the pan and let cook until almost cooked through - should be some liquid left in the middle.
Step 4. Add the peppers, onions, rocket and feta onto one side of the omelette. Let sit until feta is almost melted. Fold 1/2 of the omelette over onto the other half. Let sit for 1-2minutes. Serve and enjoy!

Ingredients Required.
750 g - Minced Beef
2 - Aubergines
1 - Onion
Cube Beef Stock
1 - Tube of Tomato Paste
1 - Tub Ricotta or Mascarpone
2 - Cups Mature Grated Cheese
2 - Cups Grated Mozzerella
1 - cup Parmesan
Step 1. Preheat Oven to 180 Slice Aubergines, brush with Olive oil, season and bake for 20 Minutes.
Step 2. Fry the Beef with Onions until beef is browned. Then add the seasoning, Garlic, Stock cube and Tomato Paste. Remove from heat.
Step 3. Whisk the Ricotta or Mascarpone with the egg and half of the parmesan.
Step 4. Layer the Lasagne: (Note - I drop spoonfuls of the Ricotta/Mascarpone Mixture on top of the Aubergine layer)
1/2 Beef
1/2 Aubergine
1/2 Ricotta/Mascarpone mixture
1/2 Grated Cheese
1/2 Mozzarella
Remaining.

Step 5. Bake for 30 - 40 Minutes
