salt and pepper to taste
cilantro and avocado (diced) for garnishes

6) Add spices and bring to high heat to melt cheese
7) Once cheese has melted add the green chilies and beans

I Try To Make A Texas Style Chili For The First Time | The Neighbors Kitchen
Well it was bound to happen, today I try my hand at a Texas Style Chili! Hearty and FULL of peppers, I think I did a pretty good job! The Sugar Rush Peach Pepper I used was phenomenal and I really enjoyed using my homegrown peppers.
The seasonings I used in this chili were:
2 tsp of cumin
1 tbsp (after spilling probably more like 2 1/2) light brown sugar
1 tbsp coarse kosher salt
1 tbsp worcestershire sauce
The liquids I used in this chili were:
1 bottle of Sam Adams Oktoberfest beer
beef broth - started with 2 cups and then added until the surface was covered
The dehydrated peppers I used were:
2 poblanos (called anchos in dehydrated form)
3 cayenne peppers (#capsicum annuum)
1 Sugar Rush Peach Pepper (50-100k #scoville units)
The fresh peppers I used (I consider the frozen peppers fresh because they were picked fresh and immediately flash frozen and vacuum sealed) were:
~2 cups of jalapenos
3 poblanos

Cincinnati Chili From A Cincinnatian! | The Neighbors Kitchen
If you are unfamiliar with Cincinnati Style Chili you NEED to check this out! With its unique flavor profile and consistency it is a meal loved around the world. As a Cincinnatian I am going to show you my favorite chili dish that I would order if I were to go to a chili parlor around town! I also debut my new #blackstone E-Series indoor/outdoor electric griddle (not sponsored, I just love it) - don't worry, the recipe is just as easily accomplished on a stove with a pan. The recipe below is designed for cooking in a 6 quart Crock Pot. I hope you enjoy!
Grocery List:
3 lbs 80/20 or 85/15 ground beef
3 cups chopped sweet onion
4 cups beef broth
29 oz can tomato sauce
3-4 tbsp chili powder
3 tbsp instant ground garlic
3 tbsp apple cider vinegar
3 tbsp worcestershire sauce
1 1/2 tbsp baking cocoa
1 tbsp kosher salt
1 1/2 tsp ground cinnamon
1 1/2 ground cumin
3/4 tsp ground red pepper
1/2 tsp allspice
1/2 tsp ground cloves
1 bay leaf
Instructions:
1) In a large pan (or griddle) start to brown ground beef on medium heat
2) A few minutes before beef is browned add onions and begin to soften with some of the grease from beef.
3) Once beef is browned and onions are becoming translucent add the mixture to the Crock Pot
4) Add the broth and the tomato sauce
5) Add the apple cider vinegar, worcestershire sauce and garlic
6) Add all the seasonings and bay leaf, mix together until all the ingredients are evenly spread.
7) Cook on LOW for 8-10 hours or on HIGH for 3-5, stirring occasionally.
8) (OPTIONAL) towards the end of your cook, use a potato masher to make a thinner consistency or hit it with a few blasts with an immersion blender. My preference is using the immersion blender but I somehow lost that footage... sorry...
Serve over thick spaghetti with shredded cheddar and oyster crackers or on a hot dog for a coney dog!

Stop Throwing Away Your Pickle Juice! Chicken Marinade From Pickle Juice | The Neighbors Kitchen
What do you do with your pickle juice after you finish all the pickles? If you are just throwing it away you need to try this instead! Check out this easy way to make a fantastic chicken marinade with pickle juice.
Grocery List:
Chicken of your favorite style (I used 6 small to medium chicken breasts in video)
Pickle Juice (you need about 1 cup)
1 cup olive oil
2 tbsp water
1 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
Instructions:
1) Mix all the ingredients of the marinade together and whisk
2) Place chicken in a mixing bowl or gallon freezer bag and add the marinade
3) Refrigerate for at least 1 hour and no more than about 3 (you will start pickling your chicken)
4) After removing from the fridge make sure to spread the seasoning out from the bottom of the bowl or bag onto your chicken with a brush as not to waste any glorious flavor
5) Preheat your gas grill to medium heat and place your chicken on the grates once heated properly
6) Cook to temp! Not to time! Every few minutes flip the chicken and every so often check with an instant read thermometer from the side until the internal temperature is 165 degrees.
7) Let rest at least 5 minutes before cutting into the meat and enjoy!
Sides that would go great with this would be a black pepper mashed potato dish, or grilled corn... Maybe some spicy asparagus OR chill chicken in the fridge and slice up into small pieces and eat over a salad! You could also use this recipe to make chicken salad!

My Favorite Crock Pot Corn and Beans Recipe! | The Neighbors Kitchen
Today I'm sharing with you my favorite Crock Pot meal - Corn and Beans. I got this recipe from a book my mom gave me after high school graduation. I consider this meal comfort food, but it is also vegetarian!... at least until we add cheese at the end... Anyway, follow along for this super easy, super delicious meal made in the crock pot. Stay tuned to the end - my brother enjoys this meal with me!
Grocery List:
1 tbsp olive oil
1 large onion, diced
1 or 2 jalapeño peppers, diced
1 clove garlic, minced
2 cans (16oz) light red kidney beans, rinsed and drained
1 can (16oz) of sweet corn
1 can (14.5oz) diced tomatoes, undrained
1 green bell pepper, cut into 1 inch pieces
2 tsp chili powder
3/4 tsp table salt (or 1 1/2 tsp kosher salt)
1/2 tsp ground cumin
1/2 tsp black pepper
1 carton (8 ounces) plain yogurt (optional) (I went with optional)
Instructions:
1. Heat oil in a skillet on medium-high heat. Add onion, jalapeño pepper and garlic; cook for 5 minutes. Add onion mixture, beans, corn, tomatoes with juice, bell pepper, chili powder, salt, cumin and black pepper to the Crock Pot. Cover and cook on low for 7 to 8 hours or on high for 2 to 3 hours.
2. Spoon corn and beans into bowls and serve. Add your favorite garnishes, we picked a Mexican blend of cheese and Andy likes ranch dressing. But black olives or avocado, and sour cream would be my next suggestion!

My Cousin's Taco Queso Chicken Dip | The Neighbors Kitchen
Today we're making a taco queso chicken dip my cousin Carson made and shared with me from miles away! Carson is in the service and we don't share many meals together these days, so this episode is dedicated to all the servicemen and women who can't be home this season to enjoy things like this with their loved ones while watching their favorite teams play. Carson told me to "Neighbor it up" so I did, and this is it. Thank you for sharing this with me buddy!
Grocery List:
1/2 cup unsalted butter
1/4 cup all purpose flour
1 cup sour cream
10 oz queso cheese (shredded or cubed)
1 lb extra sharp cheddar (shredded or cubed)
4 cups shredded chicken
4 tbsp taco seasoning
4 clove size squeeze's of garlic paste
hot sauce to taste
*optional* jar of salsa
serve with tortilla chips or Fritos scoops
Instructions:
1) melt butter with sour cream in a medium saucepan on low heat
2) once butter is completely melted, slowly whisk in flour
3) place cheese into roux and cover, keep on low heat stirring occasionally
4) add chicken to crock pot, stir in cheese
5) stir in garlic, taco seasoning and salsa if desired, keep on low heat in crock pot for 1 hour
6) stir again, add hot sauce to taste (Carson would use the highest octane hot sauce he could find 😉)
7) enjoy! I like to serve this with Fritos scoops but tortillas work very well too.

6) Transfer to serving device, preferably a crock pot with the "keep warm" option
The Bar:
Set your bar up in an order that makes sense: plates first, then shells, then meat, then fixin's followed by toppings and sauces. Feel free to mix this up as much as you want! Place out your favorite collection of hot sauces, cut a bunch of lime slices... the Tacobilities are endless!

Surf and Turf Salad With Chimichurri Inspired Dressing! | The Neighbors Kitchen
Surf and turf is one of my absolute favorite combinations! Over time I have created this version of surf and turf salad with a chimichurri inspired dressing. This is perfect for lunch or makes a great sharable! I like to cook my tri-tip and lobster on the pellet smoker for an added layer of flavor, but you can easily change that up for any device you may have! Check it out:
Grocery List:
1 Small to medium beef tri-tip (24oz used in video)
*you could substitute this with a chuck roast if the tri-tip is not available
2 Lobster tails, fresh or frozen (frozen used in video, because I live in Ohio)
*you could substitute this easily with shrimp or tilapia
1 Bunch of parsley
1 Bunch of oregano
Olive oil
Red wine vinegar
*you can use your favorite vinegar as an alternative
1 Lemon
*or lemon juice
Sour cream
Mayonnaise
Seasoned rice vinegar
Your favorite leafy greens! (Arugula used in video)
Cucumber
Salt and pepper (this truly counts as one ingredient)
Crushed red pepper
Dry Brining the Tri-tip:
1) Mix ratio of 2:1 course kosher salt to black pepper
2) Pat beef dry with paper towel
3) Sprinkle salt and pepper liberally over the entire cut
4) Place on drying rack in pan in the fridge for no less than 1 hour and no more than 24
5) Take out of fridge 1 hour before cooking
Chimichurri:
1) Chop the leaves of the parsley, separating the bottom leafless stems
2) Pull the leaves off the stems of the oregano
3) In a food processor or blender, put in about 2 tbsp olive oil and 2 tbsp red wine vinegar
4) Put in parsley and oregano, you can do this in "batches" if the bigger leaves run you out of space
5) Once processed to a paste-like consistency, squeeze in the juice from 1 lemon (or a couple splashes of lemon juice)
6) Add salt and pepper to taste, about 3 pinches of the same blend used on the tri-tip
7) Add crushed red pepper flakes, use between 1 and 3 shakes depending on your tolerance for heat
Lobster (or alternative, if you choose!):
1) Prepare lobster tails by thawing, and take out of shell if not purchased that way
2) Spread the chimichurri on the top, being sure to not use all your chimichurri!
Cooking the mea!:
1) Preheat smoker 275
*if you'd like to use a grill or oven set to 350 and make sure to cook to temps below
2) Place beef in about 15-20 minutes before your lobster tails
*if you use an alternative to lobster you will likely want to cook that in a pan
3) Place in lobster tails, chimichurri seasoned side up
4) Cook beef to 135 internal temp
5) Cook lobster to 145 internal temp
6) Allow to rest before cutting
Chimichurri inspired salad dressing:
1) In a mixing bowl, place the rest of your chimichurri
2) Add in equal parts sour cream and mayonnaise (about 1/4 cup each)
3) Add salt and pepper to taste (roughly another 2 pinches)
4) Stir until all the ingredients are spread out evenly
5) Stir in seasoned rice vinegar (this is the recommended vinegar as the sweet in it will REALLY compliment the heat)
6) Place in bowl or bottle to serve with later
Presentation and Serving!
1) Select your bowl of choice and make a bed of your chosen leafy greens
2) Slice your cucumber removing or leaving as much or as little skin as you like and place in bowl
3) Cut your beef and seafood in to manageable bite size chunks so the salad can be eaten easily without a knife
4) Place your beef on the greens
5) Add your seafood
6) Cover in your chimichurri inspired dressing
7) Enjoy!

Loaded Guacamole with Bacon! | The Neighbors Kitchen
Check out this LOADED Guacamole WITH Bacon! In this video I make about 5-6 cups of Guacamole which is great for a party. But you can take this same recipe down to a smaller level and make a fresh single serving or anything in between!
Grocery List:
(3) Roma tomatoes
(1/2) Red onion
(6) Avocados
Coarse kosher salt & pepper
Bacon (4 pieces used in video, use more if you like!)
Juice of one lime
Ground cumin
Sriracha sauce
Black olives (small can)
Instructions:
1) De-seed the tomatoes
2) Chop by hand or in a food processor to a "salsa-like" consistency, add to bowl
3) Chop by hand or in a food process half a red onion, add to bowl
4) Remove the pit from avocados
5) Get avocados out of their skin, place in a bowl.
6) With a potato masher and a fork, start mashing everything in a bowl, using the fork to get any larger chunks the masher won't get.
7) Add salt and pepper to taste
8) Add bacon, and then more bacon, and even more bacon - if you like
9) Squeeze in the juice from 1 lime
10) Shake in a few shakes of ground cumin
11) Add ~1 tbsp of sriracha (or more, that's cool)
12) Stir all ingredients together, and take a taste test to see if you need to add anything additional.
13) Add in black olives, and stir in gently
Serve this with a taco bar, or use it as a snack with chips, literally put this on anything!

One Pot Stop!? Entire Dinner in the Instant Pot | The Neighbors Kitchen
A One Pot Stop: entire meal made in one device. Today we're making juicy pork chops, cauliflower mash, and steamed veggies all in the Instant Pot. Use this video to make 4 servings for you and your friends or family, or use it for meal prep to make your week more convenient!
Grocery List:
4 pork chops
1 head of cauliflower
Fresh parmesan cheese (can be substituted with pre-grated or pre-shredded)
Garlic Paste (or fresh garlic)
Your favorite frozen vegetables (Normandy blend used in video)
Butter
Beef broth
liquid smoke
wu·stuh·shr saas
Avocado oil
Salt & pepper
Your favorite pork seasoning (Neighbor's Flavor used in video)
Preparation:
1) Brush oil lightly on your pork chops and cover in seasoning
2) Place on rack or plate in fridge for at least 1 hour (if possible)
3) Cut your cauliflower into florets
4) Grate your cheese! (or don't...) either way you need 1/2 cup
Pork Chops:
1) Take the lid off your instant pot, and set it to Sauté mode
2) Put in about 1 tbsp of butter and enough avocado oil to cover the bottom (this will be different based on the size of your instant pot, just get good coverage)
3) Once oil and butter are spread evenly, get some tongs and begin to sear your chops evenly, on all sides. Make sure you alternate cooking surfaces as seen in video
4) Once your chops are looking good set them aside and put in your beef broth (this will be 1-2 cups depending on what size instant pot you have)
5) (the instant pot is still in Sautee mode) with a wooden spoon or spatula scrape the bottom to release the bloom - this is known as de-glazing and the stuff on the bottom is delicious, don't be afraid of it.
6) Turn off saute mode
7) Add in a few shakes of worcestershire sauce (or more if you like)
8) Add a few shakes of liquid smoke
9) Place chops in bottom of pot
10) Close lid and set to "seal"
11) Set to normal pressure for 7 minutes (for 1 inch thick chops) if you are using 1/2 inch thick chops set to 4 minutes
12) Once complete, manually release the pressure and set chops aside, make sure to leave the liquid that your chops were cooked in.
Cauliflower Mash:
1) Place steamer basket in bottom of pot
2) Place cauliflower florets in steamer basket
3) Close lid and set to "seal", normal pressure for 7 minutes
4) After 7 minutes manually release pressure and place your cauliflower into something you can mash in
5) Add your cheese and garlic (3 cloves or about 3 clove sizes of paste)
6) Mash! with potato masher, fork, blender.... do however works for you.
7) Salt and pepper to taste
Steaming Frozen Veggies in Instant Pot:
1) With the same liquid and same steamer basket used for cauliflower, place your favorite vegetables in the basket (about 2 cups for 4 servings)
2) Set to normal pressure for 2 minutes (1 if you prefer crunchier)
3) Once done, manual release take vegetables out and place in something you can mix in
4) Add 1 tbsp butter and salt and pepper
5) While still fresh out of the pot stir butter and salt and pepper
Enjoy!
