Make A Whole Chicken In Your Instant Pot! | The Neighbors Kitchen
Check out this weeknight hack for a whole chicken! With little hands on preparation and then a set-it-and-forget-it cook, you just can't go wrong! Let's get cookin!
Chicken Seasoning:
2 tsp kosher salt
1 tsp white pepper
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
Cooking Instructions:
*pre flight check tip* Before doing anything make sure your chicken fits in your Instant Pot! I used a 7.13 lb chicken in a 6 qt. IP
1) Stuff the cavity of the bird with vegetables; I like to use onion, celery, carrots, garlic...
2) Coat the entire surface of chicken with seasoning listed above or your favorite chicken rub.
3) Place the trivet in IP, and pour in enough water to cover the bottom completely.
4) Place in the chicken and cook on normal pressure for 6 minutes per pound, allowing a 15 minute natural release with “keep warm” off.
5) After the cook and natural release, remove chicken
6) (optional) coat the surface of chicken with butter and additional seasoning, broil on high (450 degrees) for 4 minutes or until golden brown.
7) Eat! Serve this with your favorite sides of any other chicken dinner or use this as you would a rotisserie chicken!

How To: Shredded Chicken In An Instant Pot
What's up everybody!? In this video you will learn how to shred chicken easily at home with an Instant Pot. Use this method to make shredded chicken for any recipe. Salads, meal prep, or freeze for later shredded chicken is an excellent thing to keep on hand. I use a 6 quart Instant Pot with 5.6 lbs. of boneless & skinless chicken breast. However, you can use a different size Instant Pot and different quantities of chicken, just be certain to not overfill the Instant Pot above the "PC MAX" line. This same method will also work with other cuts of chicken that are both boneless and skinless.

The Perfect Winter Blues Buster: Creamy Taco Soup | The Neighbors Kitchen
This Creamy Taco Soup comes together with ease, can be made in numerous different devices, and is highly customizable! The way I made it in the video is a perfect Keto or low-carb option, but take this recipe and make it your own! Stretch it out with beans or rice. Grocery List:
Oil of choice for bottom of pot for browning beef
2 lbs. ground beef
1 quart (32 oz) beef broth
1 large yellow onion, diced
2 small green bell peppers, diced
1 jalapeno pepper
2 cans (14.5oz each) diced tomatoes
4-5 tsp instant garlic, or 4-5 cloves minced
4 tbsp taco seasoning
(2) 8 oz package cream cheese
Salt and pepper to taste
Garnishes (watch video)
Instructions:
1) Begin by browning ground beef, for a true "One Pot Stop" use 6 qt Instant Pot on the sauté function.
2) Once beef is browned, add broth and stir in. Use broth to scrape off any fond at the bottom (if present)
3) Add the peppers, onions, and jalapeno.
5) Add garlic
6) Add tomato, drain first if using canned
7) Add Taco Seasoning, stir all ingredients around to ensure even distribution
8) Start out by cooking for 3 1/2 hours, (on HIGH if using traditional slow cooker and not having browned beef, LOW is okay if otherwise) leave cream cheese out to soften
9) After 3 1/2 hours, check to make sure peppers and onions are soft as you like, if so add cream cheese, and cook for another 30 minutes.
10) Serve with avocado, cilantro, sour cream, basically anything taco-y!

(Not) Stuffed Peppers! Quick & Easy Dinner | The Neighbors Kitchen
(Not) Stuffed Peppers are AWESOME! And with another Artic blast coming, this recipe would be perfect to keep warm with. At under 3 dollars per serving, only 20 minutes to cook, and easy cleanup (only 1 skillet needed) you can't go wrong.
Grocery List:
1 medium to medium large red bell pepper, diced
1 medium to medium large green bell pepper, diced
15 ounce can of your favorite tomato sauce
1 oz fajita seasoning mix (you can also use taco seasoning)
1 package of Uncle Ben's Ready Rice Spanish Style
1 lb. of 80/20 ground beef
8 oz (small carton) of sliced mushrooms (baby bella works best)
1 medium yellow onion, diced
Instructions:
1) In a large skillet, heated to medium heat, begin to brown beef.
2) Just before the beef is done, add onions and fajita seasoning. Allow onions to soften while beef finishes.
3) Move beef and onions to one side of the skillet and add mushrooms (as seen in video), add salt and pepper to mushrooms if desired.
4) Give the mushrooms a head start and then mix into the beef and onions.
5) Add peppers and stir into the rest of the ingredients, allow to soften.
6) Once peppers have reached your desired firmness, stir in tomato sauce and allow to come to temperature.
7) Once steam is being released, add rice and stir evenly.
8) Top with shredded cheese, sour cream, or cilantro; garnish with avocado, or for a neat change in pace - make some toast and eat on top of that 😉

Marinade Recipe:
1 1/2 tbsp kosher salt
2 1/2 tbsp maple syrup
2 1/2 tbsp Worcestershire sauce
2 1/4 tsp black pepper

1 1/2 cups distilled water
Mix together, place in freezer bag with pork and let marinade in fridge preferably for 3 hours minimum, overnight would be better!

Homemade Biscuits & Gravy | Easier Than You Think!
Everyone likes biscuits and gravy, I mean is there a better breakfast? Did you know they're easier than you might think to make from scratch? Follow along with me and let's make homemade biscuits and sausage gravy right here (or there) at home!
Grocery List:
Biscuits:
3 cups all-purpose flour
3 tbsp sugar
4 tsp baking powder
1/2 tsp table salt
1/2 tsp cream of tartar
1 cup whole milk
1 egg
3/4 cup cold, like really cold butter (I pulled mine straight out of the freezer)
Gravy: 📢📢below is the batch size used in video, you may want to double!! 🔔🔔
1 lb country pork sausage
2 1/2 cups whole milk
1/4 cup all purpose flour
salt and pepper to taste
Instructions:
Biscuits:
(preheat oven to 450 degrees)
1) Mix flour, sugar, baking powder, salt, and cream of tartar together in a large mixing bowl
2) In a smaller mixing bowl add milk and egg, beat egg into milk
3) Cut or grate frozen or very cold butter into mixture
4) Mix all ingredients together being certain to not disturb the butter too much
5) Place dough on a clean, dry counter that has been covered in flour
6) Fold dough over itself (like you see in video) 10-12 times, flatten to be 3/4 of an inch thick or so
7) Use a biscuit cutter or jar or lid and cut biscuits, place on lightly greased pan (or lined with parchment paper)
8) Bake at 450 degrees for 10 minutes, check for golden brown color - if needed add more time.
Gravy:
1) In a large skillet heated to medium-high heat start browning sausage
2) Once completely cooked (no pink) break clumps to a small texture
3) Sprinkle flour evenly through the entire skillet and mix into sausage until completely absorbed
4) *While mixing* slowly pour milk into skillet
5) Reduce heat and continue to cook until gravy thickens and becomes the consistency desired.
6) Add salt and pepper to taste

Make Chili Mac! Super Simple Hangout Dinner! | The Neighbors Kitchen
Have you ever heard of Chili Mac before? If you haven't, you need to start keeping these ingredients on hand! This makes for a super simple, quick and delicious meal that will go over like gangbusters. I use leftover chili in the video but feel free to make some from scratch for this OR use store bought; after all, this is supposed to be EASY!
Small Batch (2-3 servings)
1 tbsp butter
1 tbsp all purpose flour
1/4 cup sharp cheddar
1/4 cup Velveeta (cubed)
1 cup elbow macaroni
2 cups of chili
Medium Batch (4-6 servings)
2 tbsp butter
2 tbsp all purpose flour
1/2 cup sharp cheddar
1/2 cup Velveeta (cubed)
2 cup elbow macaroni
4 cups of chili
Large Batch (8-12 servings)
4 tbsp butter
4 tbsp all purpose flour
1 cup sharp cheddar
1 cup Velveeta (cubed)
4 cup elbow macaroni
8 cups of chili
Instructions:
1) Start out with making a yellow roux by melting 2 tbsp of butter in a small pot or saucepan on medium-low heat.
2) Stir in flour, continue stirring until there are no clumps of flour remaining.
3) Add in the cheese and Velveeta and reduce heat to low, allow to melt, and stir as necessary.
4) In another pot (sized appropriately for the batch size you are making) start boiling water per the instructions of the pasta, cook pasta to desired firmness and drain water.
5) Return cooked pasta to pot and stir in the melted cheese.
6) Add chili and stir until evenly distributed, place on low heat with a lid until temperature comes up to serving temp!

Not Your Average Club Sandwich! | The Neighbors Kitchen
You know, not every time in the kitchen needs to be overly complicated or fancy. There is nothing wrong with making a sandwich 🥪 but if you're going to make a sandwich make THIS sandwich!
Grocery List:
Your favorite bread
Sliced turkey
Sliced ham
Bacon
Tomato (thinly sliced)
Lettuce mix (I like a baby spring mix but use your favorite)
Sliced Swiss cheese
Sliced cheddar cheese
Mayonnaise
Honey
Yellow mustard
Smoked paprika
Celery salt
Instructions:
1) Make your "secret sauce" by mixing about 1 tbsp mayonnaise, 1/2 tbsp honey and 1/2 tbsp yellow mustard, a few shakes of smoked paprika and celery salt all together in a small bowl.
2) Start cooking your bacon (it is my preference for sandwich bacon to be somewhere between crunchy and chewy and you get that by cooking at medium-low heat and a longer cook time)
3) Toast 3 slices of bread while getting a slight char on the turkey and ham slices (don't skip this step, trust me 😉)
4) Start building! The correct order for this Club Sandwich is: toasted bread, toasted turkey, swiss, thinly sliced tomatoes, secret sauce, middle toasted bread, toasted ham, bacon, cheddar, lettuce, secret sauce, toasted bread.
5) Traditionally, you will want to cut this monster sandwich in half (I like to cut mine in triangles, but halves are acceptable... I guess...)
6) Serve with some classic potato chips and/or a pickle and have with your favorite soft drink, enjoy!

Poor Man's Brisket | The Neighbors Kitchen
Have you ever heard of Poor Man's Brisket? Poor Man's Brisket is a beef chuck roast that is cooked just like a brisket (pro tip: you can do this same thing with an eye of round, too!) This is an awesome trick to have up your sleeve because it is basically brisket but on a smaller scale (both on cook time and on your wallet but doesn't sacrifice on flavor!) If you don't have a Traeger or pellet smoker - worry not! Use these same exact steps at home in your oven! So cut down on your cook time, cut down on your beef bill, and still have fantastically delicious meat right there at home.
Grocery List:
Beef chuck roast (consider about 1/2 pound uncooked per serving)
Kosher salt
Your favorite beef rub
Plastic wrap
Butcher paper
Instructions:
1) (24 hours before cook time) Dry Brine & place in fridge 🔵HOW TO VIDEO HERE ➡️➡️ https://youtu.be/wWtVlhxVDjQ
2) (12 hours before cook time) Season with your favorite beef rub & wrap in plastic wrap, place back in fridge
3) (1 hour before cook time) take beef out of fridge and let acclimate to room temperature
4) Unwrap and cook @ 225 degrees in pellet smoker
5) Once internal temperature of beef reaches 160 degrees pull off and wrap in butcher paper
6) Place back on the pellet smoker and cook until the internal temperature reaches 203 degrees.
7) Let rest for at least 15 minutes before carving, enjoy!

The ONLY Way I Will Cook A Turkey! | The Neighbors Kitchen
Today I'm going to show you how to spatchcock, season, and cook a turkey and win over everyone at Thanksgiving! I also make some gravy from scratch - a fantastic addition to your Thanksgiving spread. Thank y'all for hanging out with me today and thanks for watching!
The Turkey:
1) Begin by spatchcocking the turkey (see video for instructions) 12-14 lb turkey used in video
2) Coat all surfaces of turkey with kosher salt on a baking sheet with rack
3) Spread seasoning (see below for recipe) evenly over top of salt layer
4) Let sit in fridge on baking sheet with rack for MINIMUM 3 hours, but preferably overnight
5) Remove turkey from fridge for about 30 minutes before placing in oven, during this period preheat oven to 425 degrees
6) I prefer to use a digital thermometer probe, but you can use the built-in pop-out thermometer, this 12-14 lb turkey took 90 minutes to cook the internal temperature to 165 degrees fahrenheit.
7) Once internal temperature has been reached, remove the turkey from the oven and let rest for 30 minutes before carving
8) Carve your turkey better than I do 🤣
9) Enjoy and share thanks 🙏 with your friends and family
Turkey Seasoning (save this in your favorites ⭐ and use it on all poultry!!)
1 tbsp Dried Rosemary
1 tbsp Dried Thyme
1/2 tbsp Dried Sage
1/2 tbsp Garlic Powder
1/2 tbsp Onion Powder
1/2 tbsp White Pepper
The Gravy
4 cups turkey broth (homemade or otherwise, see video for audio explanation of how to do at home)
1/2 cup all purpose flour
salt and pepper to taste
turkey drippings from cooking the turkey
1) Heat broth on medium heat, do not bring to a boil
2) Slowly whisk in flour, consistently, until all clumps are gone
3) Add salt a pepper to taste
4) Stir in turkey drippings from baking sheet

Let me show you why you need to start making MASHED POTATOES in an Instant Pot! Super easy and repeatable, perfect every time - you will never want to boil your potatoes ever again after you see this method. Appreciate you very much for watching, let's get cookin'!
Grocery List:
5 lbs of russet potatoes (AKA Idaho potatoes)
1 block of cream cheese (8oz)
1 stick of unsalted butter (4oz)
5 clove size squeezes of garlic paste
salt and pepper (to taste)
dried chives (about 2 tbsp)
dried parsley (about 2 tbsp)
Instructions:
1) Peel potatoes, ensuring to make the biggest mess possible in your kitchen
2) Slice potatoes just to make them smaller, they do not need to be cubed evenly as if you were to boil them
3) Place in Instant Pot and cover with water - making sure to cover the potatoes but not going over the "PC Max" line
4) Set to normal pressure for 8 minutes, keeping in mind that it will take 8-10 minutes to come to pressure
5) After 8 minutes of pressure cooking do a manual release
6) Drain water from potatoes and return to pot, at this point you can place Instant Pot on "keep warm"
7) Add cheese, butter, salt and pepper, chives, and parsley to the pot with potatoes
8) Using a hand mixer, mix all the ingredients together until smooth and creamy
9) Enjoy!

The Smoked Tomatoes & Alternative:
I keep quart containers of my smoked tomatoes in my freezer that I use instead of canned diced tomatoes. The process for doing this is to halve the tomatoes (romas work best) and place on smoker at lowest setting for 2-3 hours. Remove from heat and place in an ice water bath, this helps release the skins. After a couple of minutes in the water bath you should be able to peel off the skins, and then discard (skins, that is.) Then dice the skinless tomatoes and use immediately or freeze for later use. Ingredients:
6 cups cooked black beans
2 cups vegetable broth
1 medium red onion
1 large red bell pepper
30ish oz smoked diced tomatoes
2 ribs of celery
1 medium carrot
4 cloves of garlic
olive oil (for softening onions)
2 tsp seasoned rice vinegar
2 tbsp chili powder
2 tsp smoked paprika
1 tbsp kosher salt
1 tsp oregano
1 tsp thyme
2 tsp cumin
2 bay leaves
cilantro and avocado for garnishes
1 aurora pepper (optional)
1 banana pepper sliced (optional)
Instructions:
1) Make black beans in your Instant Pot, 2 cups of dry beans will make 6 cups of cooked beans. Use 8 cups of water only, do not add seasoning, pressure cook normal for 30 minutes followed by a 20 minute natural release. Once complete drain and rinse.
2) Set Instant Pot to Saute mode, coat the bottom with olive oil. Dice onion and add to bottom along with the garlic cloves: pressed.
3) Once onions and garlic are nice and aromatic and the onions are becoming translucent, add bell pepper: diced
4) After a couple of minutes, switch Instant Pot to Slow Cook mode, add the remaining ingredients, stir well to mix everything together.
5) Allow to cook for 2-3 hours and then use a cornstarch slurry to thicken to your preference (this step is optional)
6) Serve with your favorite garnishes, I prefer avocado and cilantro with this chili.

White Chicken Chili - You're Gonna Love This!! | The Neighbors Kitchen
Maybe you're brand new to White Chicken Chili, or maybe not! Either way, you're gonna love this recipe. If this is your only chili recipe you'll be doing well! Check it out:
Grocery List:
2 tbsp unsalted butter
1 medium yellow onion, diced
4 clove sized squeezes of garlic paste
2 serrano peppers, diced and seeded
4 cups low sodium chicken broth
1/3 cup heavy whipping cream
8 oz cream cheese
10 oz bag of super sweet frozen corn
7 oz can of diced green chilies
2 15 oz cans of cannellini beans
1 1/2 - 2 lbs skinless bone in chicken breast
3 tbsp all purpose flour
1 1/2 tsp cumin
1 1/2 tsp chili powder
1 tsp smoked paprika
1/2 tsp oregano
1/2 tsp ground mustard
salt and pepper to taste
cilantro and avocado (diced) for garnishes
Instructions:
1) In a pot preheated to medium heat, melt butter
2) Add onion and stir in garlic paste
3) Once onions and garlic are nice and fragrant and onions become somewhat translucent, add peppers, mix all together
4) Once peppers are softened add chicken broth and whipping cream
5) Add cream cheese
6) Add spices and bring to high heat to melt cheese
7) Once cheese has melted add the green chilies and beans
8) Add frozen corn
9) While mixture is still simmering stir in flour to thicken
10) Decrease heat to low and add chicken, if chicken sits above the liquid line add more broth or water. Cook for at least an hour before pulling.
11) After at least an hour remove chicken to safe surface to shred, then shred with desired tools and place shredded chicken back into the chili
12) Let simmer for another 20-30 minutes, remove from heat
13) Serve with desired garnishes! My favorite is cubed avocado and cilantro with just a small dollop of Daisy!

Smoked Rib Meat Chili From The CAMPGROUND! | The Neighbors Kitchen
Today I am SUPER happy to share with you today a chili I have been working on for YEARS! Check out this Smoked Rib Meat Chili we cook from the campground 🏕️ & Crusader Kitchen in a big ol' stock pot on the Blackstone stove burner.
Smoked Rib Meat Chili:
~2 racks of baby back ribs, smoked, pulled and shredded
1 qt of bone broth
1 qt of crushed cherry tomatoes
2 (15.25oz) cans of no salt added black beans
1 (15.25oz) can of whole kernel sweet corn
1 large red bell pepper
1 large green pepper
1 large white onion
3 dehydrated cayenne peppers (substitute with chili powder)
2 dehydrated jalapenos (substitute with chili powder)
3 tbsp Neighbors Flavor (below)
1 tbsp seasoned rice vinegar
1 tbsp Sweet Baby Rays
Salt and Pepper to taste
Neighbors Flavor: (in volume for customizable batches)
1 part Kosher Salt
1 part Table Salt
1 part Black Pepper
1 part Onion Powder
1 part Garlic Powder
1/2 part Smoked Paprika
1/2 part Ground Cumin
1/4 part Dried Cilantro
1/4 part Ground Coriander

I Try To Make A Texas Style Chili For The First Time | The Neighbors Kitchen
Well it was bound to happen, today I try my hand at a Texas Style Chili! Hearty and FULL of peppers, I think I did a pretty good job! The Sugar Rush Peach Pepper I used was phenomenal and I really enjoyed using my homegrown peppers.
The seasonings I used in this chili were:
2 tsp of cumin
1 tbsp (after spilling probably more like 2 1/2) light brown sugar
1 tbsp coarse kosher salt
1 tbsp worcestershire sauce
The liquids I used in this chili were:
1 bottle of Sam Adams Oktoberfest beer
beef broth - started with 2 cups and then added until the surface was covered
The dehydrated peppers I used were:
2 poblanos (called anchos in dehydrated form)
3 cayenne peppers (#capsicum annuum)
1 Sugar Rush Peach Pepper (50-100k #scoville units)
The fresh peppers I used (I consider the frozen peppers fresh because they were picked fresh and immediately flash frozen and vacuum sealed) were:
~2 cups of jalapenos
3 poblanos
