Too Many Zucchinis?
Do you have more Zucchinis coming out of the garden than you can eat? Here's 3 ways to solve the problem.
SWEET MUSTARD ZUCCHINI PICKLE
1.5 kg chopped Zucchini
1 kg chopped Onion
200 g Garlic and Jalapeno (optional)
1 cup salt
Cover with water and soak 4-12 hours
Drain and rinse well.
3 cups Apple Cider vinegar
3 cups white vinegar
2 cup raw sugar
1 cup Xylitol
3 Tablespoons ground Mustard
2 teaspoons hot curry powder
1 Tablespoon Turmeric
Cook till soft - 45min -1 hour.
Thicken with 3/4 cup cornflour.
Add to sterilized jars while hot.
Makes 3.5 kg
