This lemony bread is so refreshing and moist! It's gluten free and loaded with more nutrition than regular bread. Packed with Fiber, Iron, Potassium etc from the flax seed. Also uses half the sugar compared to many recipes.
This version omits the chemical leavening agent such as baking powder.
It's still great without any leavening agent, but if you prefer to use baking powder, use 1-2 TSP. It's the perfect way to start the morning, great for dessert or anytime snack,

If you want more bold flavor for pasta sauce meatloaf, you can add garlic and Italian herbs to meatloaf. Worcestershire sauce and mustard to the topping as well.
