I've gotten soooo many requests to share how I make this smoothie. This recipe uses the most basic of ingredients and is super customizable! Regardless of whether or not you use fresh or frozen ingredients, this is sure to satisfy and leave you feeling nourished and refreshed! -🍍 You can use whichever fruit blend you like. The green color we love comes from the spinach, which is able to shine because I didn't use super pigmented fruits like blueberries or blackberries. The lighter your fruits are, the greener the smoothie will be! -🥬 I always like to use spinach, but I've also added in carrot and avocado in the past! This is a great way to get some of your DV of veg with little feeling overwhelmed. That's always been a challenge for me, so I appreciate how yummy and easy this is! -💸 This recipe is CHEAP. A 5lb bag of frozen fruit costs around $8, a bag of chopped frozen spinach costs around $2, and a can of orange juice concentrate costs around a $1.50 (prices vary depending on where you live and shop- I live in the South and shop primarily at Walmart and Aldi). I get days and days out of those three simple ingredients, which means a single smoothie (which is large enough for two adults) costs less than a cup of gas station coffee- a good metric because gas station coffee is the cheapest beverage I can think of. I've served this to people as young as two and as old as sixty and everyone has loved it- how can you not?! It is just so simple and easy and delicious and nutritious. There is a reason people love the fiberglass clamshell-style of camper!🐚 Of course, even a camper as sturdily built as Bigfoot isn't impervious. Our camper is 30 years old and the ONLY reason we felt secure in purchasing it was because it had only had two owners and had been meticulously cared for and preserved. Nothing is bullet-proof if it goes through enough abuse, so it pays to be careful. But if you are, it's amazing how long-lasting these campers can be!! We took the belly panels off of ours to tackle some maintenance awhile ago, and it was the first time we'd looked under there. It was pretty incredible how un-damaged everything looked. It gave me a huge boost of confidence in our little home-on-wheels. The care that goes into building these campers is unparalleled in the RVing world. We did some interesting things last week that I'll be sharing more about soon, but it included taking a good ol' fashioned family photo.... The easiest way to do that is to set up a video recording and then grab some good stills from it later..... Watching this little clip makes my heart so happy. River had plenty of room to sit on the stoop, but she wanted to put her front paws in my lap. And Apollo literally doesn't care what's happening, as long as someone tells him he's a good boy. I love making this super easy lentil-walnut taco meat. It is extremely customizable, and perfect for feeding a crowd of hungry people. It's great for meal prepping too! LENTIL WALNUT TACO MEAT: Ingredients: -1 cup lentils -1/2 cup chopped walnuts -1 large onion (sub onion seasoning to taste if desired) -1 can diced tomatoes -Several cups of water -Taco seasoning (see recipe link below) Directions: -Soak lentils and walnuts in warm water at least 30 minutes prior to cooking. Lentils and walnuts should be completely submerged. -In Dutch oven or pot of choice, warm a few tablespoons of veggie or olive oil. If you are using an onion, chop and add to pot, sautéing until tender. -Drain walnuts and transfer to cutting board. Chop up a bit finer, then transfer to pot. Stir in taco seasoning, and onion powder if you are not using an onion, and sauté until "toasted". -Pour lentils into pot. You do not have to drain them first. -Add can of diced tomatoes and enough water that the ingredients in the pot are mostly covered. I never measure this step, so follow your instincts. It's okay if you have to add a bit more water later on. -Bring pot to boil, then reduce to simmer and cover for around 35-40 minutes, or until the lentils are nice and tender and the liquid has been absorbed or mostly cooked off. -Let cool slightly and serve or store in containers for future meals. -Easy Taco Seasoning: https://natashaskitchen.com/taco-seasoning-recipe/#jump-to-recipe FTC Disclosure: Some of the links below are affiliate links.
